Carrot & Pea Sized Aubergines with Long Green Beans Pasta & Broccoli Coconut Cream Sauce

Phew, what a long title! This recipe is an extension of my ‘broccoli & coconut cream soup’ recipe. I even made another dish out of it! Really an experiment that tasted good like it is below rather than mixed with the soup I thought!

Green Long beans – side dish

250g green long beans cut into half inch pieces

2 cloves garlic crushed

1 Thai chilli

ground black pepper just a sprinkle

vegetable oil

salt

Method

1. Fry the garlic in a pan with oil on medium heat.

2. Add beans, chilli, salt and black pepper and fry for 3-4 minutes (or 6-8 minutes if you miss the next step!).

3. I added 3-4 tablespoons of water and let simmer for another 3-4 minutes with lid on frying pan because my green beans were going yellow and a little dry and I wanted to make them juicy again. It sort of worked. I let the water evaporate though!

4. Serve as a quick and simple side dish.

Carrot and Pea Sized Aubergine –  side dish

 Ingredients

1 carrot cut into strips

⅓ cup pea sized aubergines (optional)

1 clove garlic crushed

1 Thai chilli

ground black pepper just a sprinkle

vegetable oil

salt

Method

1. Fry the garlic in a pan with oil on medium heat.

2. Add carrots,pea sized aubergines, chilli, salt and black pepper and fry for 3-4 minutes.

3. Add 2-3 tablespoons of water and let simmer for another 6-8 minutes with lid on frying pan. You want the water to evaporate but the carrots to be juicy.

4. Serve as a quick and simple side dish.

Notes:

1. I added the above 2 side dishes to my soup ( just a tablespoon per side dish per bowl of soup) to add some crunch but really referred the soup without.

2. To make the dish in the picture below I sieved the broccoli & coconut soup to make it thicker and added to al dente cooked pasta (which I made and ate with the soup anyway) with the side dishes of green beans and carrots, sprinkled with dry roasted roughly crushed peanuts. This was an interesting and quite delicious mix. Another dish all from everything I’d cooked anyway!
